Hi guys! So earlier this week, I was reminiscing about my trips to Paris and the delicate amazing pastries they had. I started to crave a macaroon really really badly so I ran out to the store and quenched the craving, but then a second wind hit me, Madelines. But I couldn't find them anywhere.  They are like little mini cakes where it is acceptable to eat many of them at once. PORTABLE CAKES. People have varying opinions on whether a madeline should be dense or light, I prefer something a little bit in the middle, leaning towards a light texture. Also people argue over whether it should have a little bump on the back, some say its the sign of a good madeline while others avoid them like the plague, personally I think the little bump gives it character (and something to prop it up on while taking pictures). So let's jump right in. 
I went to my nearest Bed Bath and Beyond and just bought the first madeline pan I saw, mine was by Wilson and was a metal pan (I've heard that the silicone ones are good too). I then promptly google recipes to see the ingredients I would need and most had the same few ingredients, all of which I had in my kitchen to begin with. Then, to find my recipe, I went through google images to find the prettiest ones and I ended up at http://www.bigbearswife.com/chocolate-dipped-madeleines-sundaysupper/ 
That recipe is what we will be adapting just a tad today. 
Makes: 24
Ingredients 
4 eggs

1/4 teaspoon salt Just a small pinch of salt
2/3 cup sugar Make it an even cup
1 teaspoon vanilla   1 1/2 teaspoons of vanilla or 1 teaspoon of lemon extract

1 cup flour, all purpose 
1 stick unsalted butter, melted (Just take a stick or 1/2 cup of butter, put it in a microwavable bowl and nuke it for 45 seconds so it doesn't scald) 
Instructions 

Preheat the oven to 375F. While it's preheating, spray your madeline pans with Pam cooking spray or butter them if you feel like it. (Also, if you only have 1 pan (12 madelines), after you take the madelines out of the pan for the first batch, take a paper towel to get all the excess and respray and you can get away with it. That's the only reason I strongly recommend spraying down the pans so that the butter doesn't burn in the pan)

In a medium bowl (or the bowl of a stand mixer) beat the eggs with the salt together until foamy Like around 3 minutes on high, you will need a handheld or stand mixer if you don't want your arms to hurt after a minute. 
While the egg mixture is beating, slowly add the sugar. Just add in 1/3 of the sugar at 2 minute intervals. Mix on medium-high speed for 5 minutes. eh mix till it's really pastel yellow and fluffy to the point of no return. 
After 5 minutes mixture should be a pale yellow color and quite fluffy.

Add in the vanilla and mix well. If you want to substitute Lemon switch it in now! Just add vanilla extract until it smells good. Also, try and get a natural vanilla, I recommend the one from costco, sorry I'm such a Costco girl)
Remove the bowl from the stand mixer and use a spatula for the following steps.
Fold in the four and butter, alternate pour a little of each and fold the batter until all of the flour and butter have been used. Just dump the flour in first and then the butter on top, take a big spoon to mix it in a little. When it looks like a little yellow mess with some flour here or there, then go in with a spatula
Pour the batter into each mold of the Madeleine pan, about 1.5 tablespoons worth of batter for each one. (about 3/4 full) NO NO NO, fill it halfway because when I filled it with 3/4 the batter spilled over the mold. 
Bake for 7-9 minutes, or until until the madeleines are golden and spongy. Look for the back of the madelines to be light brown and the edges of the mold to be a medium brown. If you plan on eating them not right away, wait till the edges are a light brown 
Flip baked Madeleines onto a cooling rack and let cool. For about 4 minutes, they cool fast, and the fresher the better so you can eat them straight out of the oven (I did, well 2 minutes afterwards). If you leave them out for 5 minutes, they will become dry dry dry.
After the Madeleines are cooled, melt the chocolate according to the package directions. If you want, I think they're 100% fine as is. 
Dip the tip of the Madeleine into the chocolate, set onto a baking sheet lined with foil or parchment paper. Let chocolate harden.(If using toppings, sprinkle the toppings onto the chocolate before it hardens)

THEN EAT THEM ALL, HOLD A TEA PARTY, INVITE YOUR NEIGHBORS OVER. May I recommend hot chocolate and madelines. It will be my new Christmas tradition.

So as of recently, I've had to make the change to being gluten free for the past few months and there was something difficult I had to figure out how to convert my favorite foods to their gluten free alternative. What I found, was that there is NOTHING that is helpful when finding out whether the gluten free food tastes decent or if it even is gluten free with secretive ingredients that make contact with gluten. It's as if these companies assume that if we choose or have to maintain a gluten free lifestyle that we don't need anything that tastes good. So rant aside, here's what I found in my grocery store, that I consider the best of gluten free and gluten sensitive foods 
Side note before I start: I think that the Glutino brand is amazing at making snack foods so sorry if I might have a lot of Glutino products in this list


Snacks:

Glutino Chocolate Chip Cookies

So let me start first off, that these are probably the best gluten free cookies I have ever tried in my life! They're very crunchy, so if you like chewy cookies, this really wouldn't really be a good option. I would compare these to the Chips Ahoy! brand of chocolate chip cookies in terms of flavor. One thing I will say is that the chocolate chips aren't very chocolate tasting for lack of better words. The texture isn't dry on accident, the dryness works for the cookie. I think these would be ideal for consuming with coffee or tea by dunking them in to give some moisture. These retail for $5.49 for a package of 18 cookies, so on the more pricey side.

Beanitos Chips

Yum yum yum yum yum. This company has a certified gluten free product range spreading from cheese puffs to "tortilla chips". Gluten tends to hide in products that are conventional snack foods like tortilla chips and it's difficult a suitable alternative that doesn't taste terrible. These however are a god send. I received the black bean and chipotle flavors complimentary for review, however I wasn't the biggest fan of them. They weren't amazing but they didn't suck, however I was interested in the company because the rest of their snacky foods sounded good. They included a coupon with the product so I went out and bought the "Hint of Lime" and "Real Cheesy Puffs" flavors and they were yummmy. The hint of lime was comparable to the Chipotle brand of tortilla chips and the cheesy puffs are like the Cheetos puffs. This is a perfect product to dip your toe into the Gluten Free world because you can buy individual bags rather than committing to a whole box.

Breakfast:

Trader Joe's: Joe's O's

These I would compare to Cheerios in terms of texture, however the flavor, way off. Now these taste different than Cheerios. They don't taste similar in the fact that have a slightly sweet undertone. Cheerios have a more savory and wheat like taste but these would be good with some sugar or something of that nature sprinkled on top to add more flavor. One thing I absolutely want anyone reading this to know before buying is that I haven't seen any specific claims to being gluten FREE so if you are sensitive, I would stay away, but if you are trying to attain a gluten free lifestyle, this should be fine.

Udi's Pizza/ Pizza Crust

So Udi's is a widely known brand in the gluten free community, especially for their bread products. Their pizza crust is fantastic, I've served it to my Non-Gluten Free friends and they can't tell the difference. They recently partnered with Pizza Hut to make specially gluten free pizzas that you can actually customize! It's a great idea especially since they cook the pizzas and prepare them in a separate kitchen. The only downside is that there are select locations with this line of pizzas :( 

The rest of the best places near me tend to be local so if you want to find restaurants or places to shop for Gluten Free foods, I would highly recommend this website that helps find Gluten Free places near you! http://www.findmeglutenfree.com/

The first I pulled out is this Sally Hansen Airbrush Legs, leg makeup. So basically it replaces body makeup and is a substitute to permanent bronzer I think. I would compare the idea to MAC face and body foundation.(Retail Value:  2.99 USD)
The next product I pulled out is a Beanitos Black Bean chip bag and we got another one in Chipotle BBQ. (Retail Value: 3.99 USD)
Next came a duo of Bear Naked Granola, it looks super yummy, in Sea Salt Caramel Apple (guess which one was eaten immediately after the photo) and Coconut Almond Crunch (Retail Value:  5.19 USD)
Next came this Australian Gold Sunscreen with SPF 30. It smells like sunscreen, nothing shocking.(Retail Value:  8.07 USD)
Next, the thing that got me the most excited, a NYC 24 hour Eye Shadow Stick in this taupey color. I think its' best use would be a eyeshadow base. (Retail Value: 2.99 USD) 
Next we have a Hair Food Root Cleansing Shampoo that smells immensely like strawberries, I really can't stand food scented soaps, shampoos, etc. So I will be passing this along to one of my friends. (Retail Value:  9.99 USD)
I forgot to take a photo of the Nasoya Zero Calorie Noodles which I also passed along because I don't tend to eat noodles ever. (Retail Value:  Couldn't find it, sorry )
